Going to the market is one of my favorite things in the week, for some is a tedious task, but for me is a Flavor discovery quest.
I consider myself one of those people who eat only if I likes what I see.. Mmmm thinking it twice, ignorance is a bliss, I just find more interesting to eat something that looks good.
I’m all about the senses, my mind is ready to dive in a ocean of flavors and go on a roller coaster of emotions.
People cook what they feel, what they desire and over all, they cook what they dream of.
The Zucchini is a very versatile vegetable, you can eat it grilled, poelé, baked and even eat its flower! The zucchini is one of those vegetables you can eat with everything, so I decided to make some boats, with a little bit of everything… some italian inspiration maybe.
Easy to make and above all, delicious, light and tasty.
For the Zucchini Boats Revisités you will need:
Recipe for 2 persons
- 2 zucchinis (long if possible)
- 200 gr bacon cut in little sticks (lardon in France)
- 1 tomatoe cut in dice
- half onion finely sliced and cut in small pieces
- 1 clove of garlic cut in very small dice
- Half red pepper cut in dice
- Salt and pepper
- Olive Oil
- 4 tbsp of Tomatoes – Basilic sauce with sliced Olives (homemade if possible)
Preheat the oven at 180°C.
Cut the zucchinis in half. Carve it nicely to remove the center (white part) without breaking the skin. Prepare the 4 zucchini boats with a thread of olive oil, salt & paper. Set aside.
Cut in dice the white part of the zucchini previously removed. In a large pan, cook the bacon and garlic until caramelized, add the onions, tomatoes and the white zucchini dices and cook for 5 minutes, or until most of the water produce by the zucchini will evaporates.
In another frying pan, make sauter the red pepper with a little bit of olive oil a, salt and pepper, cook for few minutes. Mix with the rest of the vegetables and proceed to fill up the boats.
Fill the zucchini boats with the vegetables + bacon. Add some tomatoes-basilic sauce, and sprinkle some olives here and there.
Add some Parmesan cheese in the top and bake for 20 minutes.
Serve hot and enjoy!
